We can’t quite match that for age but we have butchered an eight year old Beef Shorthorn cow. She was born into a local organic herd and has munched lush Wigsthorpe grass for each of the last five summers and wintered inside on a diet of hay from the same pasture. The beef is being hung for approximately 5 weeks, where it is developing a full, rich flavour.
