We have raved about 14 year old beef from Galicia that can be bought at vast expense. We can’t quite match that for age but we have butchered an eight year old Beef Shorthorn cow.
She was born into a local organic herd and has munched lush Wigsthorpe grass for each of the last five summers and wintered inside on a diet of hay from the same pasture.
The beef is being hung for approximately 5 weeks, where it is developing a full, rich flavour.
